Wulkje (cream cloud)
Share
German: Wulkje (Sahnewolke) Also known as: Wulkje, Wölkchen, Sahnewölkchen, Rohm
Cream that, in East Frisian tea culture, is carefully added to the tea at the edge of the cup and rises like a little cloud without being stirred.
After the kluntje and the tea, in East Frisia liquid cream is carefully added at the edge of the cup with a small cream spoon. The cream first sinks and then rises again as a white cloud, in East Frisian "wulkje". The tea is not stirred.
When drinking, one thus tastes first the mild cream, then the strong tea and finally the sweetness of the rock candy. Unwhipped cream with sufficient fat works for the cloud, whereas milk tends to disperse. The ritual is part of East Frisian tea culture, recognised as intangible cultural heritage.
