Giling basah (wet hulling)

German: Giling Basah (Wet Hulling) Also known as: Wet Hulling, Wet-Hulled, Semi-Washed

A processing method common in Indonesia in which the parchment is removed while the bean is still moist; typical of earthy, low-acid coffees.

In giling basah the cherries are depulped and only briefly pre-dried. The parchment is removed while the bean still contains a lot of moisture, after which the green coffee finishes drying without its protective layer. The method shortens drying in the humid tropical climate.

It is particularly common on Sumatra and other Indonesian islands. The beans often look bluish-green. In the cup it usually produces heavy body, low acidity and earthy, spicy, sometimes herbal notes.
