Forastero

Also known as: Forastero-Kakao, Konsumkakao, Bulk-Kakao

Robust, high-yielding variety group of cocoa that makes up most of the world harvest and delivers a strong, tart cocoa flavour.

Forastero originally comes from the Amazon basin and is now grown mainly in West Africa, but also in South America and Southeast Asia. The trees are more resistant and higher-yielding than Criollo.

The beans are usually dark purple inside and taste stronger, more bitter and tarter. Forastero forms the basis of most everyday chocolate, cocoa powder and cocoa drinks. It is therefore also called bulk or consumer cocoa. Individual origins such as Nacional from Ecuador are nevertheless counted as fine cocoa.
