Cocoa powder (high-fat and low-fat)

German: Kakaopulver (schwach und stark entölt) Also known as: Backkakao, Schwach entölter Kakao, Stark entölter Kakao, Fettarmes Kakaopulver

Powder made from roasted, ground and partly defatted cocoa beans which, under the German Cocoa Ordinance, contains at least 20% cocoa butter in dry matter, or less when highly defatted.

To make cocoa powder, cocoa mass is pressed so that part of the cocoa butter runs off. The remaining press cake is finely ground. Under the German Cocoa Ordinance, cocoa powder must contain at least 20% cocoa butter based on dry matter. In trade it is often called lightly defatted.

Fat-reduced or highly defatted cocoa powder contains less than 20% cocoa butter, often around 10 to 12%. It tastes tarter and dissolves more easily. Pure cocoa powder is unsweetened and thus differs from drinking chocolate and cocoa drink powders.
