Whey and whey drink

German: Molke und Molkegetränk Also known as: Molke, Süßmolke, Sauermolke, Molkenmischerzeugnis, Molkendrink

Greenish-yellow liquid that drains off when making cheese and quark, and the mostly fruit-flavoured drinks made from it.

Whey forms when milk is curdled by rennet or acid and the curd separates from the liquid. Sweet whey comes from cheesemaking with rennet, acid whey from souring, for example for quark. Whey is low in fat and contains milk sugar, minerals and high-quality whey protein.

Whey drinks are often mixed with fruit juice or flavourings to soften their tangy, slightly salty taste. In whey mixed products, flavouring ingredients may make up no more than 30%. Whey is also an important raw material for protein powders.
