Buttermilk

German: Buttermilch Also known as: Reine Buttermilch, Buttermilch mit Frucht

Tangy, low-fat milk drink left over from making butter from soured cream; pure buttermilk contains no additions.

Buttermilk is produced during churning when the milk fat separates from the rest of the cream. Today soured cream is usually churned, so the buttermilk tastes mildly tangy. Its fat content is no more than 1%.

For ordinary buttermilk, limited amounts of water or skimmed milk may be added during churning. Pure buttermilk, by contrast, is made without such additions; only water may be removed from it. Buttermilk is regarded as a refreshing drink and is also sold with fruit preparations.
