Skimmed milk

German: Magermilch (entrahmte Milch) Also known as: Entrahmte Milch, Magermilch 0,1 %, Skim Milk

Largely skimmed drinking milk with no more than 0.5% fat, used both as a drink and as a raw material for many dairy products.

Skimmed milk is what remains when almost all the cream is removed from milk in a centrifuge. Its fat content may not exceed 0.5%; in practice it is often around 0.1 to 0.3%.

It is low in energy but still contains protein, milk sugar and calcium. In taste it seems thin and slightly bluish in colour. Skimmed milk is also an important raw material, for example for low-fat quark, skimmed milk powder or for adjusting the fat content of other dairy products.
