Third wave (coffee)
Share
German: Third Wave (Kaffee) Also known as: Third Wave Coffee, Dritte Welle
A term for a coffee movement that focuses on origin, green coffee quality and craft preparation.
The term roughly divides coffee history into waves: the first stands for widely available household coffee, the second for espresso drinks and coffee-house chains. The third wave, named around the turn of the millennium, treats coffee more like wine, focusing on growing region, variety and processing.
Lighter roasts, small roasters, hand brewing and transparent supply chains are typical. The classification is a rough description rather than a fixed definition; some now also speak of a fourth wave.
