Sencha
Share
Japan's most popular green tea: steamed and rolled, with a fresh, grassy taste.
For sencha, freshly picked leaves are briefly steamed so they do not oxidise, then rolled and dried. This produces the typical needle-shaped, deep green leaves.
Sencha tastes fresh, grassy and slightly tart. It is brewed with water below boiling point and a short steeping time, otherwise it turns bitter.
