Yellow tea

German: Gelber Tee Also known as: Huang Cha, Yellow Tea, Men Huang
A rare Chinese tea category in which fixed leaves are kept warm and moist, turning them yellowish and milder.
Yellow tea, Chinese huang cha, is first fixed like green tea. Then follows its own step, "sealed yellowing" (men huang): the still warm, moist leaves are wrapped or heaped and left to rest for a while. Compounds change without enzyme action, and leaf and liquor turn more yellow.
The flavour is softer, rounder and less grassy than green tea. Well-known types include Junshan Yinzhen from Hunan and Huoshan Huangya from Anhui. Yellow tea is produced only in small quantities.
