Also known as: Ayran-Getränk, Joghurtgetränk gesalzen, Doogh
Salted, refreshing drink made from yoghurt and water, common in Turkey, the Middle East and the Balkans.
Ayran is made from yoghurt, water and a little salt and whisked vigorously, often producing a light head of foam. It is an everyday drink in Turkey, the Middle East and the Balkans and goes well with grilled meat and spicy dishes.
In Germany, there are compositional requirements for industrially produced ayran, including protein and salt content. It is sold chilled in cups and bottles. Similar drinks include Iranian doogh, often carbonated and flavoured with mint, and Indian lassi.
