UHT milk
Share
German: H-Milch (ultrahocherhitzt) Also known as: Haltbare Milch, UHT-Milch, Ultrahocherhitzte Milch
Ultra-heat-treated milk filled under aseptic conditions that keeps unopened for several months without refrigeration.
UHT milk is heated for a few seconds to at least 135 °C, either by direct steam injection or indirectly via heat exchangers. It is then filled into sterile packaging under aseptic conditions. It is labelled as ultra-heat-treated and may be called long-life milk if it keeps for at least three months unrefrigerated.
The strong heating creates a slightly cooked flavour, and some heat-sensitive vitamins decrease. Once opened, UHT milk must be refrigerated like fresh milk and used quickly.
